Key Focus Areas

NSW Food Authority require NSW FSS Certificate training to include the Key Focus Areas:

  • Allergen management

  • Cleaning and sanitising

  • Safe egg handling

  • Food Act Offences

Training and assessment

The online FSS consists of training (6 topics) and assessment. Training guides you through Topic 1 to Topic 6; you must view each topic before attempting its quiz. You are required to achieve 80% for each quiz before continuing.

Assessment components:

  • Six topic quizzes and a final quiz.

  • Self‑paced assessment (SPA) workbook. The SPA contains some Food Safety Monitoring Records and the NSW Food Authority Key Focus Area learning activities and case studies for Cleaning & Sanitising and Safe Egg Handling.

  • Allergen Management Module Assessment (AMMA) workbook. The AMMA ensures you have a good understanding of the new allergen management laws.

  • Third Party Report — a suitably qualified third party must sign to attest to practical skills (see below for details).

SPA, AMMA, Third Party Report and a copy of photo ID can be submitted online. If you are not currently working in a food business, simulated workplace activities (for example, using food prepared at home) are acceptable for some assessment tasks.

The Third Party Report (TPR) is an important part of the assessment for online students.

The report attests to your practical ability to handle food safely.

It is a declaration that is signed by a suitably qualified person. This is usually a workplace supervisor or employer, and they will usually have an NSW FSS Certificate that they can upload as evidence of their suitability.

If a third party does not have an FSS certificate or other suitable qualification, a brief letter or resume from the third party must be provided.

The letter should briefly describe the third party's experience with dates and food business locations and state that the third party has worked in a supervisory capacity for at least 3 years. The letter should be signed and dated by the third party. A third party can also be subordinate to you at work (provided they are suitably qualified).
