Food Safety for Hospitality & Retail Food Staff & Management  

 Food Safety Level One - SITXOHS002A - Follow Workplace Hygiene Procedures 

All food handlers must have the “skills and knowledge” to keep food safe Food Safety Level 1 is suitable for anyone handling, preparing and serving food including all staff, cooks, chefs, kitchen-hands and volunteers. The NSW and national laws and regulations are explained in plain-English. The training uses case studies from actual outbreaks to show how to prevent food poisoning.

Assessment includes class participation in case studies, group activities and a written assessment. Participants must also provide a 3rd party workplace supervisor report for the evaluation of practical skills. A form is provided for this purpose and is to be completed by the workplace supervisor or during work experience. 

Food Safety Level Two SITXFSA001A – Implement Food Safety Procedures

Food Safety Level 2 is suitable for all staff, volunteers and supervisors in all food businesses including fast food premises, cafés, restaurants, bakeries, gourmet food stores & delis. This course provides instruction on the implementation of a HACCP based Food Safety System.

Assessment for this training comprises two parts. Part one includes case studies, review tasks and a written assessment in class. Part two is a self-paced take-home assignment. Participants must also provide a 3rd party evaluation of practical skills at this level. Instructions and a form is provided for this purpose. The form is to be completed by a suitably qualified person (eg.workplace supervisor), at a food handling premises or during work experience. 

Prerequisite: Food Safety Level 1 or equivalent nationally recognised training
